Zucchini Pie

Zucchini Pie.

2 1/2 cups zucchini, grated (or half zucchini/half summer squash)
1 small onion, very finely chopped
1 cup Bisquick. * heart healthy one is best
1/2 cup oil
1/2 cup grated cheddar cheese
2 tablespoons grated Romano cheese
4 eggs, beaten
pinches of salt, pepper, parsley and basil

Mix together all ingredients.
Pour into a lightly greased 10-inch pie plate
Bake at 350 degrees for 35-40 minutes, until golden


Another easy and delicious recipe. I've always loved zucchini and this is a great way to serve it to company or just because you love it. :)
